I made this tonight and my husband and I both liked it! I’ve come to know that I like about half as much spice as Monique adds in her recipes, so I at all times adjust accordingly. I didn’t have pigeon peas, but I subbed them with black beans and they labored rather well. This is for positive going into my regular rotation. This is one of my favourite Ambitious Kitchen recipes. I completely loved the flavors of this dish – so completely different than the flavour profiles of different dinners we make, comforting and delicious.

Sorry however Puerto Ricans don’t use jalapeno the one Mexican so I suppose there’s somewhat bit confusion there with that recipe model. This was completely the most effective Arroz con Pollo recipe I’ve tried.

Let me know if anybody has any tips/suggestions for making bigger quantities. I made this last night-it is DELICIOUS!! My husband & I each completely loved it! Great flavor with a little kick – trying ahead to it at present for lunch! My household and I liked it. This might be in a brand new recipe in my rotation of dinners.

Reduce warmth to low, cover the skillet immediately and cook for minutes. Bring to a simmer then fold in the rice and peas, making sure it is evenly distributed. Add browned rooster on high. Instead of accelerating from 4 to 5, I suggest merely doubling the recipe so it’s easier. Also don’t neglect to use an even bigger pot/pan.
